So this is what a syphon coffee maker looks like…

Besides being nice to look at what makes this guy so special? Well, it’s rather simple really – it all boils down to flavour. The syphon coffee maker produces a more clarified, delicate cup in which the subtler nuances of a coffee’s flavour profile are highlighted. These dainty flavours are usually overshadowed by a high acidity. This method of brewing lowers the acidity, which opens the way for the delicate flavours to shine. That’s it.
So, how does it work?
Hot water goes in.
A heat source is applied.
The syphon vessel is popped on top and secured with a rubber gasket.
The water heats up and some of it turns to gas (water vapour).
As the vapour expands it pushes the water up the syphon tube.
Once the brewing time is complete the heat source is removed.
The vapour contracts and creates a vacuum.
And ta-da! the coffee makes it way back down the tube.

We got to taste their new Rwandan Cup of Excellence, Lot #13 Abakunda Kawa, with the syphon, and let me tell you, its pretty damned good. It is a sweet and elegant coffee with notes of white grape and dragonfruit. Not to be missed.
